Pel en snipper de ui en de knoflook. Was de tijm, schud hem goed droog en ris de blaadjes van de takjes. Meng de tijm, de ui en de knoflook met de ricotta. Rasp de parmezaan en roer de helft door het ricottamengsel. Breng op smaak met zout en peper.<br \/>\n\u2022\tMaak de paddenstoelen schoon, verwijder het steeltje en leg ze op een met bakpapier beklede bakplaat. Bestrooi de paddenstoelen met zout en peper. Verdeel het ricottamengsel over de paddenstoelen en strooi er de overige parmezaan overheen. Gratineer de paddenstoelen ca. 15 minuten in de oven.<br \/>\n\u2022\tWas het basilicum en pluk de blaadjes van de takjes. Maal de blaadjes in de vijzel fijn en voeg geleidelijk de olijfolie toe. Breng op smaak met zout en peper.
